Simple Salsa

Ingredients

  • 1 clove of garlic
  • 2 tsp kosher salt, divided
  • 4 medium ripe tomatoes, cored, seeds removed and diced
  • 1/4 medium red onion, finely diced
  • 1 jalapeno stemmed and minced
  • (for less heat removed seeds and ribs)
  • 1/4 C fresh cilantro, chopped

Preparation

Step 1

Smash the garlic clove, sprinkle with 1 tsp salt. With the flat side of a knife, mash and smear into a coarse paste,

Combine garlic mixture, tomatoes, onion, jalapeno and cilantro in a serving bowl. Cover and let set for a couple of hours before serving.

Season with remaining salt, add more if needed.

Serve with corn chips or as a burger topping.
