Ingredients

  • 8 ozs uncooked penne pasta
  • 5 T plus 1 t butter, divided
  • 3 T finely diced sweet onion
  • 1 T chopped fresh thyme
  • 1/8 t chopped saffron threads
  • 1/4 c all purpose flour
  • 2 1/2 c whole milk
  • 12 ozs uncooked lobster tail meat, cut into bite size pieces
  • 1 T sherry
  • 1 t lemon zest
  • 3/4 t kosher salt
  • 1/2 t white pepper
  • 4 oz grated Gruyere cheese (1 c)
  • 4 oz grated white cheddar cheese (1c)
  • 3/4 c panko crumbs
  • 2 T chopped fresh chervil

Preparation

Step 1

Prepare pasta according to pkg directions.

Preheat broiler to high. Grease 4 (2 cup size) ovenproof ramekins with 1 t butter.

Melt 3 T butter in Lg pan over med high heat. Add onion, thyme & saffron; saute 2 min until translucent. Combine flour & 1/2 c milk in sm bowl stirring with a whisk. Add flour mixture & remaining 2 c milk to pan; bring to simmer. Cook 2 min until slightly thickened. Add lobster & next 4 ingredients; cook 2 min. Remove from heat & stir in cooked penne & cheeses. Spoon mixture into prepared baking dishes.

Melt remaining 2 T butter in sm microwave safe dish on High for 30 seconds. Combine melted butter, panko & chervil in bowl; toss to coat. Sprinkle panko mixture over top of pasta mixture. Broil 2 min until golden brown. Let stand 5 min.
