Basic meringue

  • 4 egg whites
  • 1/2 teaspoon cream of tartar
  • 1 cup sugar

Preparation

Step 1

Beat egg whites and cream of tartar in a glass or metal bowl using a hand mixer on medium speed. When soft peaks have formed, increase speed to high and gradually begin adding sugar 2 tablespoon at a time. Beat until whites are stiff and glossy, and sugar has dissolved. Use immediately.
