Amaretto Cheesecake

Ingredients
- Graham Cracker Crust:
- 1 5 1/2 ounce pkg Graham Crackers, Crushed (Approx. 1 2/3 C)
- 1/4 C Sugar
- 1/4 C plus 2 TBLS Butter, melted
- Cheesecake:
- 3 8oz pkgs Cream Cheese, softened
- 1 C Sugar
- 4 Eggs
- 1/3 C Amaretto
- Topping:
- 1 1/2 Sour Cream
- 2 TBLS Sugar
- 2 TBLS Amaretto
- 1/4 Almonds, sliced & toasted
- Grated Unsweetened Chocolate
- Strawberries, halved
Preparation
Step 1
Graham Cracker Crust:
Combine all ingredients, mixing well. Firmly press crumb mixture evenly over bottom and 1/2 " up the sides of a 9" SPRINGFORM PAN.
Cheesecake:
Let cream cheese come to room temperature. Beat cream cheese at high speed of an electric mixer until light and fluffy; gradually adding the 1 cup of sugar, beat well. Add eggs (also bring to room temperature) one at a time, beating well after each one. Stir in 1/3 cup of Amaretto; pour mixture into prepared pan. Bake at 375 degrees for 45 to 50 minutes or until mixture is set.
Topping:
Combine sour cream, 2 TBLS sugar, and 2 TBLS amaretto; stir well, and spoon over cheesecake. Bake at 500 degrees for 5 minutes (watch closely) Let cool to room temperature on a wire rack; chill. Garnish with almonds along edge and grate chocolate on top of cheesecake. Dress up with strawberries.
