Ingredients
- 1 1/2 cups pitted dates
- 2 cups almond meal
- 1/2 cup cocoa powder
- 1 teaspoon natural vanilla essence
Preparation
Step 1
Place the dates in a bowl and cover with boiling water. Leave to soak for 5 minutes or until the dates are very soft. Remove the water from the bowl then add the almond meal, cocoa powder and vanilla essence to the bowl and combine well using your hands.
Line a small tray with baking paper and place the fudge mixture into the centre. Use a rolling pin to flatten out to roughly 1cm in height. Cover and place in the refrigerator for 2-3 hours or until set.
Slice into individual squares to serve.
