Broccolini Balsamic Vinaigrette Dish

Ingredients

  • 4 bunches broccolini
  • 1/4 C coconut oil, melted
  • 1 1/2 tbsp. balsamic vinegar
  • 1/2 tsp Dijon mustard
  • 2 tsp garlic, minced
  • 1/2 tsp Black Pepper
  • 1/2 tsp Sea Salt
  • 3 tbsp lemon juice

Preparation

Step 1

In a pot, bring water to a boil. Cut off the bottom 1/3 of the broccolini stems.
In a bowl, whisk the coconut oil, balsamic vinegar, mustard, garlic salt and pepper. When the water comes to a boil, add the broccolini and return to a boil for 2 minutes until tender.
Drain and place in a bowl. Pour dressing over broccolini and splash with lemon juice.
