Ingredients
- 2 good sized sweet potatoes, peeled and cut into large chunks (or 1 package PC baby sweet potatoes, 1 1/2 lbs. raw, unpeeled)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white wine
- 1 teaspoon chopped fresh thyme (or 1/2 teaspoon dried thyme)
- 1 teaspoon salt
- A few grinds of black pepper
- freshly grated nutmeg to taste
- 1 tablespoon butter
- 1/4 cup silk almond milk
Preparation
Step 1
1.Preheat oven to 350 degrees.
2.Place cut potatoes, olive oil, white wine, thyme, salt and pepper in a bowl and toss to coat. Pour onto a sheet pan.
3.Roast for 30 minutes, then turn and roast for 15-20 minutes more or until potatoes are tender. (If using PC minis, follow package directions)
4.Heat butter and milk in microwave until milk is hot and butter is melted.
5.In a large bowl, add potatoes and milk mixture and mash with a potato masher.
6.Adjust seasoning with salt and pepper. Serve immediately.
7.Alternately, portion into ziplock bags and freeze for future use. Re-warm gently on stovetop or microwave
