Peach Cobbler

Ingredients

  • Crust:
  • 1 1/2 cup flour
  • 3/4 teaspoon salt
  • 1/2 cup plus 2 tablespoons shortening
  • 3-5 tablespoons water to moisten
  • Filling:
  • 1 1/2 tablespoons cornstarch
  • 1/4 to 1/3 cup brown sugar
  • 4 cups sweetened sliced peaches
  • 1/4 teaspoon cinnamon
  • 2 about 2 tablespoons butter
  • sugar

Preparation

Step 1

Crust:
Mix flour and salt, cut in shortening and add water. Roll out and fit into 8 x 8 pan, trimming off extra. Roll out remaining dough; cut into strips about 8" x 1"

Filling:
Mix cornstarch and brown sugar. Add peaches and cinnamon. Pour onto prepared dough. Dot with butter. Lay strips across peach filling, using about 6 strips. Sprinkle with sugar; bake at 350 degrees until golden brown. Serve with ice cream.
