Stuffed Banana Peppers

  • 3 cups tomato sauce, divided
  • 12 banana peppers
  • 2 eggs, slightly beaten
  • 1/2 cup seasoned bread crumbs
  • 2/3 cup grated parmeasan cheese, divided
  • 1/8 cup minced fresh basil, or 2 tea. dried basil
  • 3 garlic cloves, minced
  • 1/4 tea. salt
  • 1/4 tea. pepper
  • 1/4 lb. ground beef
  • 1/4 lb. hot bulk Italian sausage
  • 1/4 lb. ground veal
  • 1/8 cup olive oil

Preparation

Step 1

Grease 13-x" baking dish. Spread 1/4 cup tomato sauce in the dish and set aside.

Cut tops off peppers and remove seeds. In a large bowl, combine the eggs, bread crumbs, 1/3 cup cheese, basil, garlic, salt and pepper. Crumble the beef, sausage and veal over mixture; mix well. Spoon into peppers.

In a large skillet cook the peppers in oil in batches over medium heat for 1-2 minutes on each side or until lightly browned. Arrange in prepared dish. Top with remiaining sauce; sprinkle with the remaining cheese.

Cover and bake at 350 degrees for 35-40 minutes or until meat is no longer pink and peppers are tender.
