Ingredients
- 1/3 cup flour
- 1 tablespoon salt
- 4 boneless chicken breasts -- split, skinned
- 1/4 pound butter
- 1/2 cup dry sherry
- 2 tablespoons soy sauce
- 1/4 teaspoon confectioners sugar
- fresh parsley
Preparation
Step 1
Combine flour and salt. Mix well. Dredge chicken in mixture, coating
well. Brown chicken in butter. Remove chicken to baking dish. Add
remaining ingredients except parsley to skillet. Bring to a boil,
stirring to mix. Pour sauce over chicken. Bake covered in pre-heated 350
degree oven for 50 - 60 minutes or until tender, turning occasionally.
Arrange chicken on serving platter and sprinkle with parsley.
