Mom Reeve's Focaccia Bread

Ingredients

  • 3/4 tsp. Active Dry Yeast
  • 1-1/2 cups Bread Flour
  • 1/4 tsp. Salt
  • 1-1/2 tsp. Sugar
  • 1/2 Cup + 2 Tb. Water
  • 1-1/2 tsp. olive oil + 2 Tb. olive oil
  • Rosemary
  • Course Salt

Preparation

Step 1

In the bowl drop the yeast into the warm water. Let it stand to proof for about ten minutes.

Add flour, salt, sugar, and 1-1/2 tsp. oil - mix thoroughly until dough is smooth and elastic.

Cover the bowl, and allow the dough to rise for about 30 minutes.

On a floured counter or flat surface punch out the dough to form either a large circle or rectangular shape. Place onto a greased baking sheet.

Preheat the oven to 400°.

Using the pad of your fingers, poke the dough lightly in various places to form indentations. Cover with a towel and allow the dough to rest for another 30 minutes or until it has risen.

Brush 2 Tb. Olive Oil - sprinkle with Rosemary and Course Salt.

Place the bread into the hot oven (bottom rack) for approximately 15-20 minutes, or until is a golden brown on top. Be careful not to overcook or it will become very hard.
