Step 1
Preheat oven to 400 degrees F.
Add cheese slices leaving about 1/2 inch between.
Bake for 10-12 minutes or until browned.
Using a paper towel, dab each cheese slice to absorb the oil.
Leaving cheese on parchment paper, transfer to wire rack to cool.
Will crisp once completely cool.
I also use crisped carrot slices and raw cucumbers slices with goat cheese and olives.
I tried something a little different this weekend. I put some coconut flour and various spices (cumin, garlic powder, onion powder, etc.) into a baggy and shook my cheese slices around in the mixture to coat them slightly and then put them on the parchment to bake. Not much mixture sticks but just enough to absorb some of the oil and give a cracker like texture on the outside (even more than usual).
