Ingredients
- 2 med. sweet potatoes, peeled and thinly sliced
- 1/2 T canola oil
- 3/4 # flank steak
- 1 small onion, thinly sliced
- 1/2 c lower sodium chicken broth
- 1 T fresh dill
- 1/2 T Dijon mustard
- Green beans
- Sour cream
- Parmesan cheese

Preparation
Step 1
1. Cook potatoes in microwave until tender
2. Cook steak
3. Cook onion 2 min., stir in broth and heat to simmering. Simmer for 5 min. Whisk in dill,mustard, and 1/8 tsp pepper
4. Prepare green beans
Mash potatoes with sour cream, cheese and salt.
Slice steak and serve with potatoes and beans
