Beef Roast, Instant Pot (Eye Round)

Ingredients

  • Instant Pot "Roast" Beef
  • Serves 8
  • Prep 10 min Saute 8 min Pressure cook 5 min Natural release 8 min Rest 20 min
  • 1 eye round beef roast (2 Ibs),fat trimmed
  • 1 tsp salt, plus more for serving
  • 1/4 tsp black pepper
  • 1 tbsp vegetable oil
  • 1 cup beef broth
  • 1 small onion, halved and sliced
  • 3 cloves garlic, smashed

Preparation

Step 1


1 Sprinkle beef all over with salt and pepper. With Instant Pot on Saute, heat oil and cook beef until lightly browned in spots, 2 min per side. Set aside.
2 In multicooker, combine broth, onion and garlic. Place rack over mixture.
3 Place meat on rack. Seal and cook 5 min on Manual. Let pressure release naturally, 7 to 8 min.

Remove meat and tent with foil. Rest until it reaches 120° for rare, about 20 min. 4 Slice very thinly and sprinkle with salt. Serve with jus.
