Cranberry Coffeecake

Ingredients

  • Cake:
  • 1 stick butter
  • 3/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cups brown sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1 cup yogurt, plain or vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 to 1 1/2 cups coarsely chopped fresh cranberries
  • Topping:
  • 2/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon

Preparation

Step 1

In a large bowl, beat together the butter, salt, sugars and vanilla until well combined and smooth. Add the eggs one at a time, beating well after each addition.

In a separate bowl, whisk together the flour, baking power and baking soda. Add the flour to the butter mixture alternately with the yogurt, stirring to combine.

Spoon the batter into a lightly greased 9 x 13 pan. Sprinkle the cranberries over the top, pressing them in gently. Prepare the topping mix. Sprinkle the topping over the cake in an even layer. Bake it in a preheated 350 degree oven for 30 to 35 minutes, until a cake tester inserted in the center comes out clean.
