Chocolate Truffles, Classic

Ingredients

  • 3 ⁄4 cup heavy whipping cream
  • 2 cups semisweet or bittersweet chocolate morsels, such as Ghirardelli

Preparation

Step 1

Line a rimmed baking sheet with parchment paper. Set aside.
In a medium saucepan, bring cream just to a boil. Remove from heat; add chocolate morsels, stirring until melted. Add additional flavorings, if desired (see below).
Pour chocolate mixture into an 8x8-inch pan. Refrigerate until firm but not solid, approximately 1 hour.
Using a 1-inch spring-loaded scoop or a tablespoon, scoop chocolate mixture into balls, and place on prepared pan. Freeze until set, approximately 15 minutes.
Roll balls to smooth edges. Cover, and refrigerate up to 10 days. Serve at room temperature.
