Ingredients
- 2 1/4 - teaspoons active dry yeast
- 1/4 - cup plus 2 3/4- cups warm milk, divided
- 3 eggs, divided
- 3/4 - cup butter, melted
- 1/2 - cup granulated sugar
- 3/4 - teaspoon salt
- 1 1/2 - teaspoon vanilla extract
- 4 cups all-purpose flour
Preparation
Step 1
Heat half of water to lukewarm. Dissolve yeast in water and a pinch of sugar. Let stand 5-10 minutes until it begins to foam.
Mix dry ingredients and put aside. Add egg yolks plus one egg white and remaining sugar to yeast mixture. Stir and blend.
Add remaining water and milk, melted butter, oil and vanilla. Stir until mixture is smooth.
Beat egg whites until stiff peaks form. Fold egg whites gently into batter. Let stand for 1 hour stirring every 15 minutes.
Grease hot waffle iron and add about ¾- of a cup of batter for each waffle.
