Ingredients
- 1 lb ground beef (or ground turkey or veggie crumbles)
- 1 onion (diced)
- 10 oz Rotel tomatoes
- 15 oz black beans (rinsed and drained)
- 1/4 cup Italian dressing
- 2 TBS taco seasoning
- 1/4 tsp group cumin
- 6 flour tortillas (8 inches)
- 1/2 cup cheddar cheese (shredded)
- 1/2 cup monterey jack cheese (shredded)
Preparation
Step 1
Preheat oven to 400 degrees.
Spray a 2-qt baking dish with cooking spray.
In a large skillet, cook beef (turkey or veggie crumbles) and onion. Drain, if necessary. Stir in tomatoes, beans, dressing, taco seasoning, and cumin.
Spread a layer of meat mixture along the bottom of the dish. Place three tortillas on the first layer of meat. Spread another layer of meat mixture over tortillas. Sprinkle half of the two cheeses. Place three more tortillas, layer of meat mixture, top with remaining cheese.
Cover with foil. Bake 25 minutes. Remove foil, bake for another 10 minutes. Remove and let stand for 5 minutes before serving.
