Potato Three Cheese Dauphinoise

Ingredients

  • 8 large potatoes, peeled and thinly sliced
  • 1/4 cup onion, minced
  • 4 tablespoons butter
  • 3 cups milk
  • 2 tablespoons flour
  • 1 clove garlic, minced
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon white pepper
  • 3/4 cup sharp cheddar cheese, grated
  • 1/2 cup blue cheese, crumbled
  • 1/4 cup parmesan cheese, shredded

Preparation

Step 1

Preheat oven to 400°F.

Mix the three cheeses together in a bowl.

In a greased 9"x13" baking pan, line bottom with 1/2 the potatoes. Add salt and pepper. Mix onion and garlic and sprinkle over top. Dust with half of the flour. Top with half of the cheese mixture. Repeat layers, ending with cheese mixture. Top with thin slices of butter.

Heat milk slightly and pour over the top of potatoes. Cover dish with aluminum foil and bake for 1 hour.

Remove foil and bake for another 1/2 hour, or until top is golden brown and bubbly.
