Banana Chia Seed Muffins

Try variations such as:
- adding 1/2 tsp. freshly grated nutmeg
- substitute brown sugar for white sugar
- substitute English Cake Spice for cinnamon
- add 1/4 tsp. of maple extract
- add 1/8 tsp. orange blossom water.

Ingredients
- 1 cup mashed banana (about 2 bananas)
- 1/2 cup applesauce
- 1 egg
- 1 tsp. vanilla
- 1 cup whole wheat flour
- 2 Tbls. chia seeds
- 3 tsp baking powder
- 1/2 tsp. salt
- 1/4 cup granulated white sugar (or sugar substitute)
- 1 tsp. cinnamon
Preparation
Step 1
1. Preheat oven to 350 degrees F. Grease 1 muffin pan or fill with muffin papers.
2. In large bowl, mixt all wet ingredients.
3. Once combined, added all dry ingredients. Stir well.
4. Place batter into muffin pan.
5. Bake for 14 minutes or until cooked through.
