Banana Cake

Cake or cupcakes with brown sugar icing. One of Mom's recipes I remember growing up. As I recall, the first time I actually made it, it makes way too much batter for just a cake and you can use the extra batter for cupcakes.

Ingredients

  • Icing:
  • 1 cup shortening
  • 2 2/3 cups brown sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 3 or 4 mashed bananas
  • 3 2/3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup sour milk
  • nuts (optional)
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • milk enough to dissolve butter/sugar
  • powdered sugar
  • milk
  • 1 teaspoon vanilla

Preparation

Step 1

Cream sugar and shortening; add eggs and vanilla; beat until fluffy. Add dry ingredients alternately with milk and bananas. Bake at 350 degrees for 50 minutes.

For icing, melt butter, brown sugar and a little milk on stove. Add powdered sugar and milk until consistency is right. Add vanilla.
