Mexican Rice

Serve this with any Mexican dish. Its' really good and very different from other recipes that contain tomato.

Ingredients

  • 1 cup raw long-grain white rice
  • 3 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1 large clove garlic, minced
  • 2 tablespoons chopped parsley
  • 2 1/2 cups chicken broth
  • 1 teaspoon salt
  • 1 pickled jalapeno, chopped

Preparation

Step 1

In saucepan, brown rice in oil together with onion and garlic.
Cook and stir until light brown.

Add remaining ingredients. Cover and simmer for 25 minutes.

DON'T LIFT LID DURING COOKING!

Serves 4.
