Buttermilk Pancakes

This is my grandfather's recipe. He adapted it from a WWII Army cookbook.
Fry these on a thin film of shortening, higher heat. They will puff up like a pastry, and you will never look at another pancake the same way.

Ingredients
- 1 c. flour
- 1 tbsp. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. soda
- 2 tbsp. butter, melted
- 1 egg, beaten
- 1 1/4 c. buttermilk
Preparation
Step 1
Barely mix to moisten all dry ingredients; will be lumpy. Fry pancakes on griddle using a small amount of lard or shortening
