Rack of Lamb

Ingredients

  • Rack of lamb
  • 1/3 cup Dijon mustard
  • 3 large cloves garlic
  • 1 Tbs light soy sauce
  • 1/2 tsp dried rosemary
  • 3 Tbs olive oil

Step 1



Put all above ingredients in mini food processor and slowly add a stream of 3 Tbs olive oil. Marinade should be the consistency of mayonnaise.

Marinate for a minimum of 1/2 hour in a plastic bag.

Preheat oven to 500 degrees

Roast, fat side up, for 10 minutes, remove and sprinkle with panko - moistening with juices in pan and continue to roast for 20 minutes more or so--maybe less for smallish rack. Internal temperature should be 140 for medium rare

Let rest 5 minutes before cutting.
