Ingredients
- 1 1/2 cups graham cracker crumbs
- 5 tablespoons butter, melted
- 1 cup plus 1 tablespoon sugar, divided
- 3 - 8 ounce packages cream cheese, softened
- 1 teaspoon vanilla
- 1 cup canned pumpkin
- 3 eggs
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- Whipped cream

Step 1
Heat oven to 350 degrees. Make crust by combining cracker crumbs with melted butter and 1 tablespoon sugar. Stir well enough to coat all crumbs with butter. Keep it crumbly. Press crumbs onto bottom and about 2/3 of the way up the sides of a springform pan. Bake 5 minutes; set aside. Mix cream cheese, 1 cup sugar and vanilla in large mixing bowl with electric mixer until smooth. Add remaining ingredients except whipped cream and beat until smooth. Pour into prepared pan and bake 60 - 70 minutes. Allow to cool to room temperature, then refrigerate. When chilled, remove sides of pan. Serve with whipped cream.
Note: may use dental floss for clean cuts.
