Ingredients
- 1 can (14 1/2 oz.0 reduced-sodium vegetable broth or chicken broth
- 1 can (8 oz.) reduced-sodium tomato sauce
- 1 medium yellow onion, finely chopped (about 1 cup)
- 1 medium green bell pepper, finely chopped (about 1 cup)
- 1 clove garlic, minced
- 1/4 tsp. dried thyme
- 1/4 tsp. freshly ground black pepper
- 1 cup long-grain white rice
Preparation
Step 1
In a medium saucepan, add broth, tomato sauce, onion, bell pepper, garlic, thyme, and black pepper. Mix until well combined.
Bring broth mixture to a boil over medium-high heat. Stir in rice. Reduce heat to low.
Simmer, covered, until rice is tender and liquid is absorbed, about 20 minutes. Remove saucepan from heat and fluff rice with a fork. Place rice in a serving dish. Serve immediately.
