Ingredients

  • 4 large zucchini or squash, sliced in half lengthwise
  • 3/4 lb. ground turkey
  • 1/2 cup onion, chopped
  • 2/3 cup water (divided use)
  • 1 tsp. Italian seasoning
  • 1 tbsp. Homemade Seasoning Mix (recipe in Misc. Cookbook)
  • 4 oz. low fat cream cheese
  • 4 oz. mozzarella cheese
  • 1 tbsp. parmesan cheese (optional)

Step 1

Preheat ove to 400 degrees. Lightly spray 9x13" pan with cooking spray,then add 1/3 cup of water to the pan.

Scoop the middle out of the zucchini or squash with a melon baller or spoon. Save this to add to the ground turkey mixture. Place the zucchini or squash halves in the 9x13" pan, cut side up, and bake in the oven for 6-8 minutes while you are cooking the meat mixture.

Brown the ground turkey, onion and the reserved vegetable that was scooped out. Cook until turkey is no longer pink, and the onion and vegetable have softened.

Add the seasoning mix, Italian seasoning and the remaining 1/3 cup water (if it is needed). Stir well, then simmer 3-4 minutes. Add the cream cheese and stir until melted and mixed well into the meat mixture.

Remove veggie boats from the oven. Spoon meat mixture in to the middle of the boats. Return to the oven and bake for additional 30-40 minutes. Zucchini is done when the "boat" pierces easily with a fork.

Sprinkle with mozzarella and parmesan cheese, the return to oven (with heat turned off). As soon as the cheese has melted, dinner is ready! Serve with salad if desired.
