Ingredients

  • For Meatballs
  • 2 medium slices of bread
  • 1 tablespoon soy sauce
  • 1/2 red onion (roughly chopped)
  • 1 garlic clove (chopped)
  • 1 egg yolk
  • zest of 1 lime
  • 1 tablespoon ketchup
  • 1 pound ground beef
  • For the Salsa
  • 1 teaspoon fresh lime juice
  • 2-3 pinches of sugar
  • 1 fresh pineapple (cut to small chunks)
  • 12 cherry tomatoes (quartered)
  • 3 green onions (trimmed and finely chopped)
  • salt and pepper
  • 1 teaspoon olive oil

Preparation

Step 1

1. cut the crusts off and tear the bread into chunks.
2. put the onion and garlic into the bowl with the bread.
3. Add the meat, lime zest, ketchup, soy sauce, and egg yolk to the bowl. Using your fingers mix until fully combined.
4. Using your hands shape the meat mixture into 18 equal balls. Place the meatballs on a plate,cover with plastic wrap, and chill for 30 minutes.
5. Put the pineapple into a mixing bowl and stir in the green onions, tomatoes, lime juice, sugar, and olive oil. Season and set aside.
6. Preheat the boiler to medium heat. Boil for 14-16 minutes, turning every 3-4 minutes.
7. Serve the meatballs with some salsa on the side.
