Baked Cauliflower Puree

Can be made ahead of time and then reheated slowly in the oven.

Ingredients

  • 1 large cauliflower, separated into flowerets
  • 1 medium onion, chopped
  • 1/2 c. buttermilk
  • Salt and pepper to taste
  • 3 Tbs. butter

Preparation

Step 1

Preheat oven to 350 degrees. Cook cauliflower until tender. Place mixture in blender or food processor and puree until smooth, slowly adding buttermilk. Season with salt, pepper, and butter, and then puree for a few seconds more to melt butter. Place in buttered 1-qt. dish and place in oven until heated through.
