Onion Soup

Ingredients

  • 8 large onions, thinly sliced
  • 4 Tbs. butter
  • 1 Tbs. olive oil
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/4 c. sifted flour
  • 6 c. chicken stock
  • 2 c. beef stock (can be 4 chicken,4 beef)
  • 1/4 c. white wine

Preparation

Step 1

Slowly cook onions in butter and oil until carmelized. Can stir in sugar and salt to help the process. Stir in flour and cook, stirring, for 5 minutes. Add stocks slowly. Boil gently for 45 minutes. Add wine 5-10 minutes before serving. Place in bowls, add bread slices, and arrange 3-4 slices of Swiss or Gruyere cheese, covering bowl complete. Broil until cheese is melted and crusty.
