Ingredients
- Serves 8
- 1 PC Organic Whole Chicken
- sea salt and freshly ground black pepper to taste
- bunch of fresh herbs - OPTIONAL
- 1/2 lemon - OPTIONAL
Preparation
Step 1
Preheat oven to 450°.
Stuff cavity of chicken with some herbs and lemon, if desired and place, breast-side up, in a dish just large enough to hold the chicken.
Sprinkle with salt and pepper and tent lightly with foil.
Bake at 450° for 20 minutes.
Remove foil and bake for a further 30 to 40 minutes, or until just cooked.
Remove to a plate, tent with foil and allow to rest 10 or 15 minutes before carving.
