Ingredients
- For the Mini Strawberry Cheesecake Cupcakes:
- 1 (15.25 ounce) strawberry cake mix
- 1 (3.4 ounce) cheesecake flavored pudding mix
- 12 ounces strawberry soda
- 1/3 cup vegetable oil
- 3 large eggs
- 84 ketchup cups
- For the Cheesecake Frosting:
- 1 (3.4 ounce) cheesecake pudding mix
- 1 (8 ounce) cream cheese, softened
- 1/2 cup butter, softened
- 2 teaspoons vanilla extract
- 4 cups confectioners' sugar
- 2 tablespoons milk
Preparation
Step 1
For the Mini Strawberry Cheesecake Cupcakes:
Preheat oven to 350 degrees.
Mix together the cake mix, pudding mix, soda, oil and eggs until smooth.
For stability, place each ketchup cup in the well on a mini cupcake tin, otherwise use a cookie sheet.
Fill each cup three-fourths full.
Bake 12 to 14 minutes or until a toothpick inserted into the center comes out clean.
Place on cooling rack to cool completely.
For the Cheesecake Frosting:
Whip together the cream cheese pudding mix, cream cheese and butter until fluffy.
Add vanilla and combine.
Gradually beat in sugar 1 cup at a time.
If frosting is too thick add milk 1 Tablespoon at a time until you have the right consistency for spreading or piping on the frosting.
Yield: Make 84 Mini Cupcakes
