Corn Fritters with Salsa

Ingredients

  • 1/2 cup flour
  • 1/2 cup yellow corn meal
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons sugar
  • 1/2 teaspoon sea salt
  • 3 large large eggs
  • 2/3 cup milk
  • 1/4 cup butter, melted
  • 2 cups whole kernel corn, fresh or if frozen; rinsed and drained
  • 3 green onions, chopped
  • 1/4 cup vegetable oil, plus more for frying
  • 2 cups fresh salsa

Preparation

Step 1

In a large bowl, mix flour, cornmeal, baking powder, sugar and salt; set aside. In another bowl, whisk eggs with milk, melted butter, corn and green onions until mixed. Add milk mixture to the flour mixture; stir just until dry ingredients are moistened. In large skillet, heat 1/4 cup oil over medium heat. Drop tablespoonfuls of batter into fryer; cook until golden on both sides, turning once. Add more oil to pan if necessary.

Serve with salsa.
