Zucchini Nut Bread

Ingredients

  • 3 eggs, lightly beaten
  • 2 cups sugar
  • 1 tablespoon vanilla
  • 1 cup cooking oil
  • 2 cups zucchini, coarsely grated and loosely packed
  • 2 cups King Arthur flour
  • 1 tablespoon cinnamon
  • 1 tablespon salt
  • 2 tablespoons baking soda
  • 1 tablespoon baking powder
  • 1 cup walnuts, chopped

Preparation

Step 1

preheat oven to 350 degrees.

Grease and flour two 9 X 5 loaf pans.

Beat eggs until frothy. Add the 2 cups of sugar. Beat until smooth and creamy. Add the 1 cup of oil and 1 tablespoon of vanilla and beat until mixture is golden yellow.

In a separate bowl, sift together the flour, cinnamon, baking soda, baking powder and salt.

Into the egg mixture, stir in the shredded zucchini and then add the flour mixture. mix until well blended. Fold in the walnuts.

Pour batter into the loaf pans. Bake at 350 degrees for 50-55 minutes or until a cke tester, inserted in the center of the loaves, comes out clean.

Let loaves cool in the pan, on a wire rack for 10-15 minutes before removing from the pans. Let cool completely on a rack befroe cutting.
