Ingredients

  • Cake:

  • 1

    (10 oz.) package frozen strawberries, thawed

  • (for 16 oz. package – 10 oz. equals ½ cup)

  • 1

    box white cake mix (without pudding), sift

  • 1

    (3 oz.) box strawberry gelatin, sift

  • ½

    cup vegetable oil

  • ¼

    cup water

  • 3

    eggs

  • Frosting:

  • ½

    cup butter, softened

  • 1

    tsp. vanilla extract

  • 1

    pound powdered sugar

  • ¼ to ⅓

    cup strawberry juice

Directions

1. Preheat oven to 350 degrees. 2. Drain the strawberries and reserve the juice for the frosting. 3. Combine cake mix, gelatin, oil, water, eggs, and strawberries. Beat until well blended. 4. Pour batter into 3 greased and floured 8 inch round pans. Bake 30 -35 minutes. Cool. Our oven takes approx. 25-27 minutes. 5. Frost cake with frosting made of butter, powdered sugar, strawberry juice and vanilla. (The amount of juice will vary. Start with ¼ cup and add as needed. Want a consistency that is easy to spread, but not runny.) *Note:* I used parchment paper instead of flouring and greasing the cake pans. Also, watch the time, as my cakes were done in 25 minutes. This is a good recipe for Valentine’s Day as well as potlucks, showers, etc.
