Baked Stuffed Shrimp

Ingredients
- 1 2-lb bag of the largest shrimp you can find
- 1/2 lb leg crab meat
- 1 1/2 sleeves of crushed Ritz cracker crumbs
- 1/2 small onion finely chopped
- 4-6 Tbsp butter
- 1 splash of olive oil

Preparation
Step 1
1. Devein and butterfly shrimp laying them out on a greased cookie sheet.
2. Saute onion in a little olive oil and butter until clear.
3. Add the flaked crab meat and toss lightly over medium heat.
4. Add a bit more melted butter, 3-4 Tbsp, and crushed Ritz crackers.
5. Using a tablespoon mound a bit of crab mix and place on top of butterflied shrimp.
6. Repeat until all shrimp are stuffed.
7. Melt another 1-2 Tbsp of butter and drizzle over all the shrimp.
8. Optional: sprinkle white wine or sherry over shrimp.
Bake for 20 minutes at 350℉. Be careful to not over cook.
Serve with cocktail sauce or lemon and drawn butter.
