2-lb bag of the largest shrimp you can find
lb leg crab meat
sleeves of crushed Ritz cracker crumbs
small onion finely chopped
splash of olive oil
1. Devein and butterfly shrimp laying them out on a greased cookie sheet. 2. Saute onion in a little olive oil and butter until clear. 3. Add the flaked crab meat and toss lightly over medium heat. 4. Add a bit more melted butter, 3-4 Tbsp, and crushed Ritz crackers. 5. Using a tablespoon mound a bit of crab mix and place on top of butterflied shrimp. 6. Repeat until all shrimp are stuffed. 7. Melt another 1-2 Tbsp of butter and drizzle over all the shrimp. 8. Optional: sprinkle white wine or sherry over shrimp. Bake for 20 minutes at 350℉. Be careful to not over cook. Serve with cocktail sauce or lemon and drawn butter.
