Ingredients

  • 1/3 C. raw rice
  • 1/2 C. sugar
  • 4 eggs, separated
  • 3 Tbsp. corn starch
  • 4 C. milk, divided
  • 1 tsp. vanilla

Preparation

Step 1

1. Cook rice in salted water until tender, and then drain if needed.
2. Scald 3 cups milk and add to rice.
3. Whisk sugar and corn starch with 1 C. cold milk and add to hot milk and rice.
4. Cook the above mixture in a double boiler for 25 minutes, stirring occasionally.
5. Add beaten egg yolks and cook a few more minutes.
6. Add vanilla and stir.
7. Carefully pour the mixture into a buttered 8x8x2 inch baking dish.
8. Cover with meringue made with 4 egg whites and 2 tablespoons sugar (or more).
9. Bake at 350 degrees until the meringue is light brown.
10. Allow to cool, cover, and then refrigerate.

*Note:* This is one of those comfort foods. Frequently we omit the meringue; pour the mixture in a bowl and chill.
