Marinated Olive & Cheese Ring

Ingredients

  • 8 oz pkg cold cream cheese
  • 10 oz pkg sharp white cheddar cheese, cut into 1/4 in slices
  • 1/3 c pimento stuffed olives
  • 1/3 c pitted Greek olives
  • 1/4 c balsamic vinegar
  • 1/4 c EVOO
  • 1 T minced fresh parsley
  • 1 T minced fresh Basil or 1 t dried basil
  • 2 garlic cloves, minced
  • 2 oz jar pimento strips, drained & chopped
  • Toasted French baguette slices

Step 1

Cut cream cheese in half lengthwise; cut each half into 1/4 in slices. On serving plate arrange cheeses upright in a ring alternating cheddar & cream cheese slices. Place olives in center.

In sm bowl whisk vinegar, oil, parsley, basil & garlic until blended; drizzle over cheeses & olives. Sprinkle with pimentos. Refrigerate covered at least 8 hrs or overnight. Serve with baguette slices.

Tips: Appetizer is very adaptable. Any cheese will work in place of cream cheese (I.e. sharp cheddar cheese). Just keep overall weight the same. For more variety, fold thin slices of deli cuts such as pepperoni & salami in half & tuck them between the cheeses.
