Parmesan Pita Toasts
Quick to grill over still-glowing coals of and existing fire, these easy-to-assemble toasts can be placed on the rack after you've removed the main course. They can also be placed under the broiler for a few minutes.

- 4 pita breads, each about 6 inches in diameter
- 1/2 cup (2 oz/60 g) grated Parmesan cheese
- Olive oil for brushing
- Salt

Step 1
Preparea fire for direct-heat cooking in a grill, or preheat your broiler and place rack in top third of the oven. If using grill, position the grill rack 4-6 inches above the fire.
Cut the pita breads in half and gently open the pita "pockets". Sprinkle 1 tablespoon of the Parmesan cheese inside each pocket, then press down firmly on the bread with your hand. Brush both sides of each half with olive oil and sprinkle with salt.
Arrange the pita halves on the rack, or broiler pan. Cook, turning over 2-3 times, until the bread is lightly browned and the cheese has melted slightly, 4-5 minutes total.
To serve, cut each half into wedges and arrange on a serving dish. Serve hot.
