Cinnamon Buns w/ Cream Cheese Frosting

Ingredients

  • For Filling:
  • Ingredients
  • 1 cup whole milk
  • 3 tablespoons unsalted butter
  • 3 1/2 cups (or more) unbleached all purpose flour, divided
  • 1/2 cup sugar
  • 1 large egg
  • 2 1/4 teaspoons rapid-rise yeast (from 1 envelope)
  • 1 teaspoon salt
  • 3/4 cup packed brown sugar
  • 2 tbsp ground cinnamon
  • 1/4 cup butter, softened
  • For Frosting:
  • (1/2 cup) cream cheese, room temperature
  • 1 cup confectioners’ sugar
  • 1/4 cup butter, softened
  • 1/2 tsp vanilla extract

Preparation

Step 1

1. Combine milk and butter in mug or glass; Microwave on high until butter melts and mixture is warmed ( 30 to 45 seconds). Pour into bowl of stand mixer fitted with paddle attachment.
2. To this add 1 cup flour, sugar, egg, yeast, and salt. Beat until combined making sure to scrape down sides of bowl. Add the rest of the flour 1 cup at a time. Beat on low until flour is absorbed and dough is sticky, scraping down sides of bowl.
3. Knead until your dough is smooth and elastic, adding more flour if sticky. Form into ball.
4. Lightly oil large bowl with nonstick spray. Transfer dough to bowl, turning to coat. Cover bowl. Let dough rise in warm draft-free area until doubled in volume, about 2 hours.

Filling:
5. Mix brown sugar and cinnamon in medium bowl.

Rolling:
6. Punch down dough. Transfer to floured work surface. Roll out to 15×11-inch rectangle. Spread butter over dough, leaving ½-inch border. Sprinkle cinnamon sugar evenly over butter.
7. Starting at the long side of the rectangle roll dough into log, pinching the dough to keep it rolled up.
8. With the seam side down take a long string or some unflavoured dental floss and slide it under the cinnamon log. Cut the dough in half first by criss crossing the string or floss across the dough. Then cut each half into 1/4 inch or 3/4 inch wide. should make between 16 to 18 rolls.
9. Spray two 9-inch square glass baking dishes with nonstick spray. Divide rolls between baking dishes, arranging cut side up leaving 1/2inch to an inch in between. Cover baking dishes let dough rise in warm draft-free area until doubled in volume, 40 to 45 minutes.
10. Preheat oven to 375°F bake for 20 minutes.
11. Once the buns are out of the oven turn them out onto a pan - wait 5 to 10 mins for them to cool slightly then flip them right side up onto a different pan.
12. Combine cream cheese, powdered sugar, butter, and vanilla in medium bowl until smooth. Spread glaze on rolls. Serve warm or at room temperature.
