Ingredients

  • 8 poblano peppers
  • 8 medium Yukon, peeled
  • 2 t salt
  • 1/4 c butermilk
  • 1 4oz can green chilis, drained
  • 1 4 oz pkg goat cheese

Preparation

Step 1

Preheat grill 350.Grill peppers, with lid up, 5 mins on each side or until peppers look blistered.

Place peppers in bag then peel. Cut pepper lengthwise down 1 side, and discard seeds.
Cut potatoes into 2 inches. Bring potatoes to a boil. Drain and return potatoes, cook until dry.
Mash potatoes, and mix with remaining ingredients. Spoon mixture into gallon size zip lock bag .
