Ingredients
- Dressing:
- 1 cup Wild Rice
- 2 cups Water
- 1/2 tsp Salt
- 2 Carrots, thinly sliced
- 1 Red Pepper, thinly sliced
- 10-12 String Beans
- 1/2 cup Mayonnaise
- 1 Tbsp Mustard
- Lemon Pepper to taste
Preparation
Step 1
Preheat oven to 350.
Place the rice, water, and salt in a 9x13 and cover tightly.
Bake for 30-40 minutes.
Combine dressing ingredients.
Remove rice from oven, most of the water should have been absorbed.
Lay the carrots, peppers and string beans on top of rice.
Place chicken cutlets on top and brush generously with dressing.
Sprinkle with lemon pepper.
Cover and return pan to oven for 25 minutes. Uncover and bake for an additional 5 minutes.
