Seafood, Tomato and Feta Bake

If you don't have cod, substitute another lean white-fleshed fish.

Ingredients

  • 1 cup chopped onions
  • 1/2 cup water
  • 2 cups chopped tomatoes
  • 2 scallions, chopped
  • 1 cup cooked rice
  • 4 ounces cod fillets or other lean white fish fillets, cubed
  • 5 ounces feta cheese, crumbled
  • 8 ounces cooked medium shrimp
  • 1/3 cup fresh bread crumbs

Preparation

Step 1

Preheat the oven to 350 degrees F. Coat a 2-quart casserole with no-stick spray.
Coat a large no-stick frying pan with no-stick spray. Add the onions and water. Cook over medium-high heat, stirring occasionally, for 3 to 4 minutes. Add the tomatoes, scallions and rice. Lower the heat to medium and cook, stirring occasionally, for 5 minutes.
Spread half of the rice mixture in the casserole. Top with the fish and sprinkle with half of the feta. Add the rest of the rice mixture.
Cover and bake for 25 minutes. Top with the shrimp and the remaining feta. Sprinkle with the bread crumbs.
Bake, uncovered, for 15 to 20 minutes, or until the cheese has melted and the bread crumbs are crisp and brown.
