Ingredients

  • 1 3/4 c all purpose flour
  • 1 T baking powder
  • 1 T chopped fresh rosemary
  • 1/2 t salt
  • 1/4 t ground black pepper
  • 1 c milk
  • 1 lg egg
  • 1 T vegetable oil
  • 1 T sour cream
  • 3 oz goat cheese log, crumbled

Preparation

Step 1

Preheat oven to 400. Spray 24 mini muffin cups with nonstick cooking spray.

In lg bowl whisk together flour & next 4 ingredients; make a well in center of mixture. In med bowl whisk together milk & next 3 ingredients; stir in goat cheese. Pour milk mixture into flour mixture stirring just until combined. Spoon batter into prepared muffin cups.

Bake for 18-20 min until golden brown. Let cool in pan for 2 min. Remove from pans & serve warm.
