Ingredients
- 1 tsp. grated lime rind
- 1/2 tsp. grated orange peel
- 1 tbsp. Tequila
- 2 tbsp. fresh lime or lemon juice
- 2 tsp. sugar
- 2 tsp. vegetable oil
- 1/2 tsp. salt
- 1 garlic clove; crushed
- 4 (6oz.) salmon fillets
Preparation
Step 1
Combine first 8 ingredients in a bag; reserve some marinade for basting/serving.
Add fish and marinate for 20 minutes in refrigerator.
Grill fish until it flakes easily with a fork, basting with the remaining marinade.
