Ingredients

  • 3 t grated lemon peel
  • 2 t minced fresh parsley
  • 2 garlic cloves, minced
  • 8 ozs uncooked fettuccine
  • SAUCE
  • 1/4 c butter
  • 1 sm onion, chopped
  • 2 garlic cloves, minced
  • 1 t grated lemon peel
  • 1/2 c heavy whipping cream
  • 1/4 t salt
  • 1/8 t pepper
  • 4 ozs cream cheese, cubed
  • 2 T lemon juice
  • 2 plum tomatoes, chopped
  • 2 t minced fresh parsley
  • Grated Parmesan cheese, optional

Preparation

Step 1

In sm bowl mix lemon peel, parsley & garlic. Cook fettuccine according to pkg directions; drain.

For sauce, in lg skillet heat butter over med high heat. Add onion; cook & stir 2-3 min until tender. Add garlic & lemon peel; cook 1 min longer. Stir in cream, salt & pepper. Whisk in cream cheese until melted. Remove from heat; cool slightly. Stir in lemon juice.

Add pasta, tomatoes & parsley to skillet; toss to combine. Serve immediately with lemon peel mixture & parmesan cheese if desired.
