Butternut Squash and Apple Soup

The best soup ever! Everyone loves it. don't try to double it though, not the same. Makes a huge batch.
After you cook it can put it in the crock pot to keep hot

Don't serve with breadsticks or garlic bread- they don't like it.

Ingredients

  • 2 tbspns. unsalted butter
  • 2 tbspns. good olive oil
  • 3 cups chopped yellow onions
  • 2 tablespoons mild curry powder
  • 5 lbs. butternut squash ( 2lg) buy precut,packaged at trader joes
  • 1 1/2 lbs. sweet aples, such as Mcintosh (4 couples)
  • 2 tspns. kosher salt
  • 1/2 tspn fresh black pepper
  • 2 cups water
  • 2 cups good apple cider

Preparation

Step 1

Warm the butter, olive oil, onions, and curry powder in a large stockpot uncovered over low heat for 15-20 mins., until the onions are tender. Stir occasionally, scraping the bottom of the pot.

Add the squash , apples, salt and pepper, and 2 cups of water to the pot. Bring to a boil, cover, and cook over low heat for 30-40 mins. until the squash and apples are very soft. Puree the soup with the immersion blender. Add the apple cider or juice and enough water to make the soup the consistentency you like, it should be slightly sweet and quite thick. check the salt and pepper and serve hot
