Ingredients
- 2 c shredded rotisserie chicken
- 1/2 c buffalo wing sauce
- 2 t canola oil
- 1 c chopped sweet onion
- 2 celery ribs, chopped
- 1/4 t salt
- 1/8 t pepper
- 4 tomato flavored or other flour tortillas (10 inches)
- 8 oz shredded Mexican cheese blend
- 1/4 c finely chopped pitted green olives
- 2/3 c sour cream
- 1/2 c crumbled blue cheese
- 2 T chopped celery leaves
- Additional buffalo wing sauce, optional

Preparation
Step 1
Preheat oven to 350. In sm bowl toss chicken with wing sauce. In Lg skillet heat oil over med high heat. Add onion, celery, salt & pepper; cook & stir until onion is tender.
Place 2 tortillas on ungreased baking sheet; top with chicken & onion mixtures. Sprinkle with Mexican cheese & olives. Top with remaining tortillas. Bake 8-10 min until golden brown & cheese is melted.
In sm bowl mix sour cream & blue cheese. Serve quesadillas with celery leaves, blue cheese sauce & additional wing sauce if desired..
