Open Face chicken salad sandwich

Mum and I love this chicken salad for lunch. Can use canned chicken also.

Ingredients

  • 1/4 cup reduced cal mayo
  • 3 tbspns chopped fresh cilantro
  • 1 tbspn grated onion
  • 1/4 tspn chili powder
  • 1/4 tspn salt
  • 1/8 tspn ground hot red pepper
  • 2 1/2 cups cooked cubed chicken
  • 6 slices rye bread lightly toasted
  • green leaf lettuce
  • 1 lg. tomatoe
  • 1 oz monterey jack cheese shredded
  • 1 ripe avocado

Preparation

Step 1

Stir together mayo, cilantro,onion, chili powder, salt and hot red pepper in med. size bowl. Add chicken , toss to coat well. Top bread slices with mixture, tomato slices, cheese and avocado slices.
