Ingredients
- Pie:
- 1/3 c sugar
- 1/2 c corn starch
- 1/2 t salt
- 3 c water
- 6 egg yolks
- 1/2 c sugar (a little less)
- 4 T butter
- 1 c lemon juice
- 3 t lemon rind
- Meringue:
- 6 egg whites
- 3/4 t cream of tarter
- 3/4 c sugar
Preparation
Step 1
Pie:
Combine 1/3 c sugar, corn starch and salt in double boiler. Blend in water gradually. Cook over boiling water stirring constantly until thick. Cover cook 10 minutes stirring occasionally.
In bowl, beat yolk, 1/2 c sugar. Add a little hot mixture and stir. Add to remaining hot mixture. Cook over boiling water 2 minutes, stirring constantly. Remove from boiling water. Add butter, lemon juice, rind and cool. Pour into baked pie shells.
Meringue:
Whip egg whites and cream of tarter to soft peak. Add sugar and beat to firm. Divide between 2 pies. Bake at 325 until tips of peaks brown.
